Green Tomato Pie
4 green tomatoes,
peeled and sliced thin
10 dried basil
leaves, chopped
1/2 c chopped
green onions
1 9 inch prebaked
deep dish pie shell
1 c grated
mozzarella chees
1 c grated sharp
cheddar cheese
1 c mayonnaise (or
half mayo/half sour cream)
5-6 slices bacon, fried crisp and chopped
Preheat oven to 350
degrees
Place sliced tomatoes
in colander in the sink in 1 layer. Sprinkle LIGHTLY with salt/pepper and allow
to drain for 10 minutes
Layer the tomato slices, basil and onion in the pie shell.
Combine the grated cheeses, bacon and mayo then mix together. Spread the
mixture on top of the tomato slices and bake for 30-40 minutes or until lightly
browned.
